SMP 95: Understanding Deep Nutrition

Today’s guest is Dr. Cate Shanahan who is a board certified Family Physician. She trained in genetics and biochemistry at Cornell University, then she attended Robert Wood Johnson Medical School. For 10 years, she practiced in Hawaii while studying ethnobotany and the culinary habits of her healthiest patients. Dr. Cate takes nutrition seriously and is the author of  “Deep Nutrition” and “Food Rules”. She is a highly sought after nutrition consultant, and even has the LA Lakers basketball team on her client list.

In college Dr. Cate kept getting shin splints, when she went to the doctor she fully expected them to be able to fix it. In real life, she never got any real answers from the Sports Medicine Doctors, so she decided to find the answer for herself. Then she started studying genetics, hoping to find a solution for pollution. Then she went to medical school and still didn’t find the answers she was looking for. After reading Andrew Weil’s book, she learned about alternative medicine and Omega 3 fatty acids.

  • We need to be told that fat is an essential part of our diet
  • The cholesterol theory of heart disease had an agenda behind it
  • Fat soluble vitamins and antioxidants are better absorbed by eating fat or butter with the food
  • Cate established a corporate relationship between the Lakers and a food chain that sources organic produce and pastured meat and dairy
  • There is a chef at the Lakers facility that cooks with healthy foods that have flavor
  • She also makes bone stock and broth, they have a dish with the stock for breakfast and lunch
  • 50% to 75% of the Lakers food is part of the healthy natural food program
  • Jeremy Lin was an accomplished chef and liked using the healthy foods with salt and butter
  • The four pillars of world cuisine
    • Get rid of food made with toxic oils – canola, corn, cottonseed, safflower, bad oils aren’t insignificant at all, make your own salad dressing, chips and crackers are also made with bad oils
    • Eat fresh food and stuff that hasn’t been cooked, heat destroys nutrients, think about how much heat you are applying to your food, eat fermented foods
    • Eat meat on the bone, traditionally people ate skin and bones and ligaments, when you boil these with vegetables you extract very important compounds
    • Organ meat, organs have unique nutrient profiles
  • Why some people have resistance to new ideas and the information that fat is actually healthy
  • How we aren’t teaching kids and parents how to eat and feed their children, so that they grow up to be healthy
  • The joy of bone broth – If you have a good broth, you can throw anything into it and have a tasty meal
  • Fat is the preferred thing to burn by our bodies
